Gingerbread House

I love Christmas and all the activities surrounding this holiday! This year I wanted to attempt a gluten / refined-sugar-free gingerbread house and it turned out pretty easy and successful! Decorating is obviously not my strength but hey we had fun which is the most important part! Note that the icing uses powdered sugar to “glue” the house together.

Ingredients
  • Almond flour, 2 cups
  • Coconut flour, 1 tbsp.
  • Arrowroot flour, 1/2 cup
  • Cloves, 1 tsp.
  • Cinnamon, 1/2 tbsp.
  • Ground ginger, 1/2 tbsp.
  • Baking soda,
  • Honey, 1/4 cup
  • Melted coconut oil, 1/3 cup
  • Vanilla essence, 1/3 tsp.
  • Egg, 1

ICING

  • Powdered sugar, 3 cups
  • Egg white, 1
In a bowl, add your dry ingredients then your wet and mix well.
Form into a ball and wrap with clear wrap. Refrigerate for an hour.
Put your dough between two parchment sheets, and roll out with a rolling pin until flat.
Use a template to cut out your house shapes. I used this one.
Preheat your oven to 190C. 
Bake your pieces for 5-6 min. Be careful they don’t burn especially if the pieces are thin! 
Let it cool at room temperature. 
Mix your icing ingredients well. 
Using a piping bag, ice / glue the edges of the four walls / sides of the house and let it set. I had to prop my walls up with stuff to keep them from not falling over.
Place the roof after the sides are set.
Decorate and have fun!
