Coconut Yogurt Bark

It’s finally spring! Embracing the warm weather with snack ideas to cool down the whole family (and a hungry toddler). Here’s a healthy twist to everyone’s favorite chocolate bark or ice cream – if you have some yogurt lying around, you can easily make yogurt bark.
For this recipe I used COCONO’s coconut yogurt as the base and added delicious toppings free of refined sugar. For a toddler-friendly version, omit the chocolate, make sure the nuts are blended well (no choking hazards) and add fruits!

Ingredients

  • Coconut yogurt (or regular yogurt), 1 cup
  • Honey
  • Dark chocolate chips, 1/3 cup
  • Dates
  • Mixed unsalted nuts
  • Goji berries
Layer coconut yogurt (or regular yogurt) on baking sheet in a flat plate or pan.
Melt dark chocolate chips at 500W for 3 minutes (be careful it doesn’t burn) and drizzle over coconut yogurt.
Drizzle honey.
Blend dates and nuts and sprinkle over your bark. I used walnuts, almonds and peanuts.
Top with goji berries for that good eyesight!
Freeze for 2~3 hours until set.
Enjoy!
