Chewy Matcha Oat Cookies

These cookies are soooo fluffy! Crispy on the outside, chewy on the inside and with a delicate matcha flavor throughout, they’re the perfect autumn go-to snack. 
Be sure to use matcha powder specific for baking and don’t overdo it on the matcha as it is quite strong.

Ingredients

  • Gluten-free rolled oats, 1 cup
  • Blanched almond flour, 1 cup
  • Matcha powder for baking, 2 tsp.
  • Baking powder, 1 tsp.
  • Egg, 1
  • Coconut oil, 1/4 cup
  • Honey, 1/4 cup
Preheat your oven to 180C.
Mix all your ingredients well.
Form round circles and flatten them on baking sheet.
Bake for 10 min.
Enjoy warm!
