Rosemary Beet Chips

In my last post about my Beet Breakfast Smoothie, I shared why beets are some of the best foods you could take during your pregnancy.
Here’s another fun way to include beets in your diet! We rarely eat potato chips at home because of their high salt and fat content, but I love finding alternative ways to “chip-ify” vegetables around the house. These Rosemary Beet Chips make your house smell so good and are appetizing and guilt free!

Ingredients

  • Beets, raw
  • Sea salt
  • Fresh rosemary
  • Olive oil
Preheat your oven to 200C.
Slice your beets. The key to this recipe is to slice your beets as thinly as possible. The beet slices should curl when sliced.
Drizzle olive oil and top with a few dashes of salt. 
Sprinkle rosemary and massage the oil, salt and rosemary into the beet slices.
Spread evenly over a baking or cookie sheet, then bake for 20 minutes or until crispy. 
Let it cool or enjoy hot!
