Introduction

Soramame Chilled Fava Bean Soup

April to June is soramame (fava or broad bean) season in Japan! My dad bought us a ton of these nutty, earthy beans and while I love their flavor, it’s not for everyone (some people describe their flavor as cheesy and sweaty…ew! Definitely not sweaty, but there’s a distinct smell). So I’ve been thinking of ways to enjoy this versatile bean.
But first let’s learn about their health benefits. Soramame are nutritious legumes packed with protein, fiber, vitamins and minerals. They contain essential nutrients such as iron, potassium, and magnesium, promoting heart health and helping regulate blood pressure. They’re also low in fat and cholesterol, making them an excellent choice for those looking to maintain a healthy weight and reduce the risk of cardiovascular diseases.
But back to the flavor. Since they have a noticeable strong taste, I paired these beans with sweet caramelized onions and tangy coconut yogurt to make a vegan soup. For this recipe I used COCONO’s coconut yogurt. The flavors complement each other without getting overpowering. Let’s give it a try!

Ingredients

  • Soramame (fava beans), 1 cup
  • Onion, 1/4
  • Olive oil
  • Salt, 1/4 tsp.
  • Water, 1/3 cup
  • Coconut yogurt (or regular yogurt), 1/3 cup
Shuck your soramame beans – usually there are 2-4 beans per pod. Grip each bean firmly with your thumbs anchored behind it and push while bending the pod backward (like snapping a twig). 
Bring a pot of water to a boil then drop in your beans. Boil for 3 minutes – be careful not to overboil! 
Plunge into ice cold water to stop the cooking process. 
Don’t eat them yet – these beans are still wearing their “jacket” and while edible, they’re quite tough. Prick or scrape off the jacket at the end of the bean using your nail and then pop the inside bean out. It should pop out easily.
Dice your onion and saute with olive oil.
In a food processor, blend all your ingredients together.
Chill for 1-2 hours. 
Drizzle some olive oil and enjoy!
