Falafel with Miso Dressing

Falafel with Miso Dressing

It’s frowned upon to make falafel with canned chickpeas (gasp!) but in Japan where it’s hard to find dried chickpeas, I’ve had to make do. Here’s a gluten-free, dairy-free falafel recipe I conjured up that is also mess free (no deep frying), crunchy on the outside and smooth on the inside, and doesn’t fall apart while you’re trying to make them (they’re held together by arrowroot powder but you can also use cornstarch).

I’ve been on a miso kick recently which is why I’ve paired the falafel with a sweet-and-sour miso dressing, but it goes well with Tzatziki sauce too (recipe here)!

Ingredients

FALAFEL

  • Chickpeas, 350~380 grams
  • Parsley, a handful (5 small sprigs)
  • Fennel, a handful
  • Onion, 1/4 cut
  • Garlic, 2 cloves
  • Olive oil, 1 tbsp. and a bit more for drizzling
  • Arrowroot powder (or cornstarch), 1 tbsp.
  • Cumin, 1 tsp.
  • Salt, 1/2 tsp.
  • Black pepper, 1 tsp.
  • Ground paprika, 1/2 tsp.
  • Ground coriander, 1/2 tsp.

MISO DRESSING

  • White miso paste, 2 tbsp.
  • Olive oil, 3 tbsp.
  • Lemon juice, 1/4 cut

      Preheat your oven to 200C.

      Drain chickpeas from water and pat them dry. Falafel recipes usually call for dried chickpeas but it can be hard to find them in Japan, so for this recipe we are using canned chickpeas.

      Dice your onion and garlic. 

      Blend all the falafel ingredients in a food processor until smooth. 

      Line your baking tray with a baking sheet and drizzle some olive oil on it.

      Make round circles with the falafel mix and place neatly on the tray. 

      Bake for 15 minutes, then flip the falafel to bake the other side for another 15 minutes. Note that this is the trickiest part of the recipe as the mixture will still be quite sticky and wet! 

      In the meantime, mix your miso dressing ingredients until smooth. 

      Drizzle your dressing (ha that’s fun to say) over your freshly baked falafel and serve immediately with salad!
