Beef Liver Taco Bowl

Liver doesn’t get the best rep, but it’s one of the best things you can eat while pregnant! Here’s one of my favorite ways to take beef liver.

Beef Liver Taco Bowl

Liver and organ meat in general gets a bad rep for being too dry, chewy and hard to cook with. I remember pretending to not be hungry when my mom would make liver stir fry.

But as I enter my third trimester, I’m learning that our bodies, especially women, need rich sources of iron and folate. And did you know that liver is one of the most nutrient-dense foods we can eat? The good news is that just a bite is extremely beneficial.

Beef liver is highly concentrated with vitamins and nutrients essential for baby. Folate aids your baby’s neural development, iron helps your body make extra red blood cells (by the end of pregnancy, you’ve increased the amount of blood in your cardio circulation by 45%) and protein with its amino acids boosts metabolism for women to grow strong healthy babies.

Beef liver contains many vitamins in high doses, especially vitamin A, so consume in small portions (once or twice a week) to supplement your pregnancy diet!

I’m all for nourishing foods but that doesn’t negate the fact that liver is still really dry and hard to cook with! Here’s a fun way we’ve incorporated beef liver in our diet – making appetizing taco bowls and mixing the liver with mince for added texture!

Ingredients

MINCE

  • Beef liver, 50 grams
  • Beef mince, 250 grams
  • Garlic, diced
  • Onion, diced
  • Cumin
  • Paprika
  • Salt
  • Black pepper
  • Olive oil

MANGO SALSA

  • Mango, 1/4 cup
  • Tomato, 2
  • Cucumber, 1 
  • Cilantro, a handful
  • Onion, 1/4 
  • Garlic, 1 clove
  • Lemon juice, 1/2 lemon’s worth
  • Salt, to taste
    Fry chopped garlic and onion with olive oil until brown.
    Dice liver and fry with mince.
    Add cumin, paprika, salt, black pepper.
    Make sure to remove excess oil.
    In the meantime, dice your mango salsa ingredients and chill.
    Serve your beef liver mince over quinoa with your mango salsa and pickled red onion (recipe here).
