You might be surprised to know that in Japan, we have a lot of citrus especially in winter! The types of citrus available never fail to overwhelm me. 

Citrus is believed to be one of the first fruit cultivated in Japan and local citrus like yuzu, mikan (tangerine), sudachi and yukou (like Japanese limes) add a delicious Japanese twist to holiday desserts and dishes!

Some of these fruits are very acidic and even a bit bitter – and as someone who LOVES citrus but gets acid reflux easily, I try to balance my recipes with just the right amount of citrus juice and zest.
