3-Ingredient Healthy Chocolate Truffles

Who else gets peckish during holiday season? I doooo…and here’s my favorite indulgent chocolate snack that’s guilt free and so easy to make! 
The key ingredient for this recipe is amazake, a traditional Japanese beverage and a by-product of producing sake. I’ve been enjoying this drink since I was a kid as it has little to no alcohol content (…I think). It’s sooo delicious as it has a natural sweetness and creamy texture. It’s also rich in nutrients like B vitamins, amino acids, and enzymes, supports digestion and promotes gut and skin health.

Ingredients

  • Blanched almond flour, 2 cups
  • Matcha powder for baking, 1 tbsp.
  • Baking powder, 1 tsp.
  • Olive oil, 6 tbsp.
  • Honey, 3 tbsp.
  • Dark chocolate chips, 1/2 cup or 1 cup
Mix all three ingredients well. If it’s too dry, add a bit more amazake, and if too moist, add more cocoa powder. Taste as you go so it doesn’t get too bitter!
Coat with cocoa powder for a classic truffle.
Chill for at least 15 min. and enjoy!
