Vegan Fable Christmas Mince Pie
I had the opportunity to try Fable meat through Mega Meat Mart (thank you!) and was so excited as I had watched a special about it on Down to Earth with Zac Efron on Netflix a year prior. And to my surprise, Fable meat tastes just as good as it looked on screen!
Fable meat is a vegan substitute using shiitake mushrooms. I love its texture and is great fried as mince. Since we’re full on in the Christmas season, I attempted this Christmas mince pie using Fable meat which is a bit crumbly which worked great for this recipe.
Unlike the traditional recipe, this recipe is 100% vegan and calls for far less sugar! I ran out of the pie crust dough to make a little topping with the trademark cut-out star, but perhaps for next time!
Ingredients
FILLING
- Fable meat, 100 grams
- Onion, 1/4
- Apple, 1/4
- Garlic, 1 clove
- Mikan (tangerines), 2
- Olive oil
- Black pepper, a dash
- Nutmeg, a dash
- Salt, a dash
PIE CRUST
- All-purpose gluten-free flour, 1 cup (I used Bob’s Red Mill All-Purpose Gluten-Free Flour)
- Olive oil, 4 tbsp.
- Water, 1/4 cup
- Salt, a dash
Preheat your oven to 180C.
Mix pie crust ingredients until it becomes dough-y.
Line a muffin tray with liners and press down the dough to make small pie crusts. Make sure you form edges as this will hold the mince filling!
Bake for 15 minutes.
Meanwhile, let’s make the mince filling! Weigh out your Fable meat and use a knife to chop it up into small bite-sized strips.
Drizzle olive oil in a pan.
Saute your diced onion, apple and garlic and add your Fable meat.
Add black pepper, nutmeg and salt (don’t go crazy with the salt as Fable meat comes slightly salted).
Blend your tangerines until it’s liquid and pour over your mince filling ingredients. Fry over medium heat until most of the liquid has dissolved.
Note: For something less sweet, use 1 tangerine instead of 2.
Your pie crusts should be ready by now. Scoop your mince filling into the crusts and bake for an additional 5 minutes.
Serve immediately!
