Kebabs with Vegan Fable Meat
I had the opportunity to try Fable meat through Mega Meat Mart (thank you!) and was so excited as I had watched a special about it on Down to Earth with Zac Efron on Netflix a year prior. And to my surprise, Fable meat tastes just as good as it looked on screen!
Fable meat is a vegan substitute using shiitake mushrooms. I love its texture and is great fried as mince. Here’s my attempt to making kebabs with it – note that Fable meat is a bit crumbly so you’ll have to use arrowroot flour or cornstarch to hold it together.
Ingredients
- Fable meat, 360 grams
- Cumin, 1/2 tbsp.
- Paprika, 1 tsp.
- Garlic, 1 clove
- Parsley, 1 sprig
- Arrowroot flour, 2 tbsp.
- Olive oil, 3 tbsp.
Mince garlic well and chop your parsley.
Weigh out your Fable meat and “knead” in cumin, paprika, minced garlic, chopped parsley, arrowroot flour and olive oil until evenly mixed.
Drizzle olive oil in a pan.
Form “nuggets” (sorry that’s the best way I can word it) and fry over medium heat until both sides are browned. If it’s not holding well (Fable meat tends to be quite crumbly) add more arrowroot flour to your meat mix.
Serve warm with some pita bread or over a salad!
