Introduction

Gluten-free Yuzu Scone

This scone is light, fluffy and very subtle highlighting the natural flavors of yuzu, Japanese winter citrus. It’s a scone so it’s not overly sweet, but it’s moist and grows on you the more you eat it! You can enjoy as it is or add some cream or jam. For this recipe, I used rice flour which creates a nice “bounce” to the scone, but be sure to serve immediately or warm!

Ingredients

  • Rice flour, 1 cup
  • Baking powder, 1 tsp.
  • Honey, 2 tbsp.
  • Olive oil, 2 tbsp.
  • Yuzu, 1 
  • Egg, 1
  • Milk, 1/4 cup
    Preheat your oven to 180C.
    Grate your yuzu and add the zest to your rice flour, baking powder, honey, olive oil, egg and milk. 
    Squeeze yuzu juice into the batter and mix well.
    Pour into your muffin tray (use liners!) and bake for 20 minutes. 
    Serve immediately as is, or with some cream or jam!
