Dairy-Free Pistachio Ice Cream

Phew – it’s been a hot few days and an even hotter summer ahead! I’ve been beating this heat with this dairy-free, gluten-free ice cream that takes me back to Italy and Greece.

Ingredients

  • Coconot yogurt, 1 cup
  • Roasted and salted pistachios, 1/2 cup
  • Maple syrup, 2 & 1/2 tbsp.
  • Almond extract, 3 shakes
    In a blender, mix all ingredients until creamy. 
    Note: I used 1/4 tsp. of almond extract but it might be overpowering. If this is your first time making this recipe, taste as you go starting with 3 shakes of almond extract.
    Pour your ice cream mixture into popsicle moulds and freeze for at least 2 hours until solid.
    Enjoy!
