Coconut Yogurt Bites

We’ve had a bit of a warm spell recently – spring is coming! But along with the breezy weather is the inevitable hay fever that Japan is notorious for. One of the natural ways to combat itchy eyes and throats is avoiding dairy (and cutting refined sugar!) as it can increase mucus production (yuck!) and cause stuffy and runny noses. So I’ve switched out my regular yogurt to Cocono, natural coconut yogurt made ethically and locally!

I like eating coconut yogurt as is with granola (recipe here!) but wanted to try desserts using coconut yogurt. As it’s getting balmy, this frozen snack is a quick recipe combining creamy yogurt with chewy crust. Best of all, it’s no-bake and easy to make with kids or on the go!

Ingredients

CRUST

  • Blanched almond flour, 1/2 cup
  • Mixed nuts, 1/4 cup
  • Coconut oil, 1 & 1/2 tbsp.
  • Cinnamon, 1 tsp.
  • Dates, 7

YOGURT LAYER

  • Coconut yogurt, 2/3 cup
  • Maple syrup, 1 tbsp.
  • Apple, 1/2 cut or fruit of choice
  • Cinnamon, a dash (optional)

      In a food processor, blend crust ingredients until doughy. (Coconut oil can either be solid or melted)

      Pat down into muffin trays.

      Blend yogurt layer in a food processor until creamy.

      Pour over the crusts. 

      Wrap and freeze securely for 2 hours until solid.

      Enjoy immediately or freeze until ready for eating!
