Vegan Chocolate Mousse
Both my husband’s and my birthdays are in winter and with Christmas and New Year celebrations too, we decided early on that we’re going to celebrate Valentine’s Day simply. That usually means eating a nice home-cooked meal and dessert, maybe some games and a movie – as long as we spend the day together.
And this recipe is just perfect for those at-home date nights! This vegan chocolate mousse uses ingredients you can find easily in your home: tofu, cocoa powder, maple syrup and nuts. For the topping, I used organic blueberries and blackberries from Horizon Farms and a dollop of tangy vegan coconut yogurt from Cocono.
Ingredients
- Silken tofu, 1 block
- Unsweetened cocoa powder, 2 tbsp.
- Maple syrup, 3 tbsp.
- Nuts, 1/3 cup
- Berries (optional)
- Yogurt (optional)
Using paper towels or a cheesecloth, drain the tofu of excess water.
In a food processor, blend tofu, cocoa, maple syrup and nuts until smooth. For the nuts, I used a mix of hazelnuts, walnuts and almonds.
Top with berries and/or yogurt and chill for a minimum of 30 min.
