Introduction

Gluten-free Apple Ginger Granola

I made up this recipe because it’s hard and almost impossible to find delicious, gluten-free granola in Japan that’s not packed with a ton of sugar and doesn’t cost a fortune! This spiced granola is perfect for those cold winter mornings – the apple and ginger add the kick! – and pairs deliciously with berries, bananas and my favorite Cocono, natural coconut yogurt made ethically and locally!

Ingredients

  • Gluten-free rolled oats, 1/2 cup
  • Chopped nuts, 1/2 cup
  • Coconut flakes, 1/4 cup
  • Maple syrup, 2 tbsp.
  • Melted coconut oil, 2 tbsp. 
  • Chopped apples, 1/4 cut
  • Chopped ginger, a handful
  • Chopped dates, a handful
  • Cinnamon, a dash (or several!)
  • Salt, a dash (optional)

      Preheat your oven to 170C. 

      Chop up apples and ginger into small pieces.

      In a large mixing bowl, add all ingredients and mix well. 

      Spread evenly on a baking sheet then bake for 30 min. Keep an eye out for it so that it doesn’t burn! 

      Let it cool and dry for about 20~30 min. then store in a jar.
