Coconut Yogurt Overnight Oats

I love how the colors for this came out! It’s two layers of blended coconut yogurt with fruits. For the fruits, I used Horizon Farm’s organic blackberries and mangoes. To fight off spring pollen fever naturally, I cut dairy and refined sugar and switched out my regular yogurt to Cocono, natural coconut yogurt made ethically and locally!

Coconut yogurt is creamy but soaks gluten-free oats really well in just a few hours! Prepare this overnight and enjoy for breakfast!

Ingredients

  • Coconut yogurt, 1/4 cup
  • Fruit of your choice, 1/4 cup
  • Gluten-free rolled oats
  • Honey (optional)

      In a food processor, blend coconut yogurt with a fruit of your choice and honey (optional). I usually use a 1-1 ratio. 

      In a cup, mix oats with yogurt and let it sit overnight. 

      Enjoy in the morning!
