Vegan Blueberry Cheesecake Bites

We went to the mountains in Myoko, Niigata this summer and I was really excited about picking up some fresh blueberries that they’re famous for. Blueberries contain vitamins, minerals and antioxidants and are some of my must-haves for breakfast daily. They’re also rich in vitamin K which promotes heart health, bone health and aids blood clotting.
Anyway, it was a bit late in the season by the time we got there so we could only pick up frozen blueberries…which I then forgot at our friend’s house. So after all that, I ended up just getting regular frozen blueberries from Costco. Sigh…preggo brain.
Moving on, here’s a delicious dairy-free, gluten-free blueberry cheesecake recipe that I made up using tofu! The keys to this recipe are to drain the tofu from liquid as much as possible, and when you’re done baking, to let it set for a minimum of 3-4 hours in the fridge so it gets firm.

Ingredients

 CRUST

  • Blanched almond flour, 1/2 cup
  • Baking powder, 1/2 tsp. 
  • Salt, a dash
  • Coconut oil, melted, 2 tbsp.
  • Coconut sugar, 1/4 cup

CHEESECAKE FILLING

  • Silken tofu, 1 block
  • Blueberries, 1/4 cup
  • Blanched almond flour, 1/4 cup
  • Honey, 2 tbsp. 
  • Lemon juice, 2 tbsp.
  • Coconut oil, 2 tbsp. 
    Preheat your oven to 170C.
    Mix crust ingredients. Note that it will be quite crumbly.
    In a cupcake or muffin tray, coat with coconut oil and then press down the crust firmly.
    Bake for 10 min.

    In the meantime, drain your tofu to remove excess liquid and water as much as possible. 
    Blend cheesecake filling ingredients until smooth in a blender.
    When your crusts are done, cool for about 10 minutes and then pour the cheesecake filling on top. 
    Bake for additional 30 min. 
    Let it set and chill for around 3-4 hours and enjoy!
