Fluffy Banana Mango Bites

A taste of summer from your oven! This blend of mango, banana and coconut goes great with ice cream for hot days. Like the recipes for my other baked goodies, this treat is gluten free (and dairy free!).

Fluffy Banana Mango Bites

These summery treats essentially share the same basic recipe as my yuzu squares, but the texture is almost completely different! The banana and coconut sugar (instead of honey) on the top filling create a fluffy, pudding-like texture. Additional sweetness comes from the pureed mango. The banana tends to overpower the mango, so experiment with the banana – mango ratio (I used 1 banana for 1 cup of pureed mango). Goes well with a scoop of vanilla ice cream!

Ingredients

 FILLING

  • Pureed mango, 1 cup
  • Banana, 1 
  • Coconut sugar, 1/2 cup
  • Coconut flour, 4 tbsp.
  • Eggs, 4 
  • Shredded coconut flakes

CRUST

  • Blanched almond flour, 1 & 1/4 cup
  • Arrowroot flour, 1/2 cup
  • Shredded coconut flakes, 1/4 cup
  • Coconut oil, 2 tbsp.
  • Water, 2 tbsp. 
  • Egg, 1
  • Salt, 1/2 tsp. 
      Preheat your oven to 170C.
      Mix crust ingredients well and then layer thinly on baking pan or muffin tray. 
      Bake for 10 min.
      Blend mango and bananas well. For this recipe, I used 1 cup of mango for 1 banana, but as mentioned above, the banana tends to overpower the mango so experiment a bit with the ratios. You could also try 2 cups of pureed mango for 1/2 banana.
      Mix in the other filling ingredients (coconut sugar, coconut flour and eggs). 
      Sprinkle some coconut flakes on the top for extra love!
      Bake at 170C for another 25 min. 
      Eat freshly baked with a cup of tea, or chill and enjoy with a scoop of ice cream!
