Negi Edamame Hummus

This lean green hummus is a great healthy snack and also adds a fun Japanese twist to regular hummus! The key to this recipe is lots of edamame!

Introduction

Negi Edamame Hummus

This is perfect for those of you who love to snack – especially if you’re working from home, it’s so tempting to grab the nearest candy bar or chips. The hubby and I avoid buying candy and junk food, especially as we head into allergy season (do you know processed sugar makes hay fever worse?) and I know myself – if there’s a snack in the house, it’s gone in an hour! Whenever I have snacky cravings, I’m forced to 1) ask myself if I’m snacking because I’m bored and 2) actually work for my snack and make myself something nutritious!
Negi Hummus Meraki Japan

Ingredients

  • Negi, 1/2 stalk
  • Edamame, 1 cup
  • Garlic, 1 clove
  • Silken tofu, 1/2 block
  • Freshly squeezed lemon juice, 1/2 lemon’s worth
  • Olive oil, 3 tbsp.
  • Salt, to taste
  • Cumin, a dash
    Cut and boil negi for 3-4 minutes (longer if you want it to be sweeter, but not too long till it gets too mushy)
    Blend in food processor with steamed or roasted edamame, tofu, garlic, lemon juice, olive oil, salt and cumin. You may need to adjust salt and cumin to your liking.
    Chill for 30 minutes to an hour before serving with veggie sticks.
