Introduction
Persimmon Autumn Salad
Persimmons are a versatile fruit: they’re subtle, sweet but not overpowering and depending on how ripe they are, can be juicy or dry. For this salad I like to use fresh, young persimmons that tend to be dry so that it contrasts with the apples and pickled onions.

Pickled red onion

Basil leaves, a handful

Prosciutto
Slice and prepare all the ingredients.
For homemade pickled red onion, soak sliced red onion in apple cider, coconut sugar and sea salt and let it sit for 2-3 days.
