Gluten-Free Banana Bread
This took a few tries but I finally figured out a moist, delicious gluten-free banana bread recipe that’s fluffy yet keeps its shape! (The rest were too dry or just sank into a banana mush!)
This banana bread is coconut-y and tastes like summer and autumn blended into one!
Ingredients
- Bananas, 2, ripened
- Walnuts, 1/4 cup
- Lemon juice, 1 tsp.
- Eggs, 3
- Coconut sugar, 1/4 cup
- Maple syrup, 1/4 cup
- Coconut milk, 1/2 cup
- Coconut oil, 1/2 cup
- Arrowroot powder, 1/4 cup
- Coconut flour, 1/2 cup
- Baking powder, 2 and 1/2 tsp.
- Salt, 1/2 tsp.
- Cinnamon, 1 tsp.
- Nutmeg, a dash
Blend the bananas until creamy, then mix with wet ingredients.
Add the dry ingredients bit by bit until the batter is well mixed.
Preheat your oven to 180C then bake for 30 min.
Add a few more bananas slices dipped in honey on top (for aesthetics!) and bake for another 10 min.
