The blend of two Japanese ingredients – persimmon and tofu – result in an irresistible creamy custard that’s perfect for early autumn days while it’s still warm outside. Vegan, gluten free and healthy too!

Introduction

3-Step Persimmon Parfait

Persimmons contain pectin which can be used to make jellies and as a thickening agent. For this recipe, the persimmon acts as a natural “binding” for the dessert and holds up well with the tofu and maple syrup. 

3-Step Persimmon Parfait Meraki Japan

Ingredients

  • Persimmon, 1, diced
  • Silken tofu, 1/2 block
  • Maple syrup, 2 and 1/2 tbsp.
  • Coconut oil, 2 tbsp.
  • Cinnamon, a dash
Blend all ingredients in food processor.
Pour into individual cups and freeze for 20 minutes.
Move to refrigerator and chill until you’re ready to serve!
