Cauliflower is not the cheapest vegetable in Japan, so whenever it’s on sale and in season, we try to pick up a few. This super-easy, super-delicious recipe is a nutritious alternative to white rice as it’s low in carbs and sugar.

Low-Carb Garlic Fried Cauliflower Rice

I was inspired to make this after talking with my best friend who had been serving cauliflower rice for a family member with diabetes. Cauliflower rice is full of antioxidants like vitamin A and vitamin C which remove free radical particles from your body that damage cells. It’s a good source of dietary fiber and also said to lower blood pressure. Sold already?

Low-Carb Garlic Fried Cauliflower Rice Meraki Japan

Ingredients

  • Cauliflower, one head, diced
  • Edamame, 1/2 cup, boiled
  • Corn, 1/2 ear, boiled
  • Garlic, 2-3 cloves, diced
  • Olive oil, 1/2 tbsp.
  • Salt
  • Black pepper
Blend the diced cauliflower in a food processor and then drain excess water with a paper towel.
In a frying pan, fry the garlic and olive oil.
Once the garlic is browned, add cauliflower, edamame and corn and fry for 7 minutes over medium heat. Add salt and pepper as needed!
Place a lid over the pan and let it sit for another 3 minutes over low heat. Serve hot!
