Introduction
Slow Cooked Lamb Shanks
As a new (and busy) mom I am a big fan of anything slow cooked as it allows me to prep ahead of time, get stuff done and return to an almost fully prepared meal!
Lamb is one of my favorite proteins for its distinctly delicious flavors plus it’s packed with iron (great for prenatal and postpartum diets) and immune-boosting zinc and omega-3 fatty acids.
For this recipe, I collaborated with Mega Meat Mart, an online gourmet meat shop that specializes in gluten-free and organic meat. Their Top Paddock lambs are grass fed and free range, making them one of the healthiest red meats!
Ingredients
LAMB SHANKS
- Onion, 1
- Carrots, 1
- Garlic, 1 clove (or more!)
- Canned tomato, 1/2 can
- Red wine, 100 ml.
- Chicken stock, 200 ml.
- Bay leaves, 2
- Oregano
- Rosemary, 2 sprigs
- Ground paprika
- Olive oil
- Cumin
- Salt
- Ground black pepper
TZATZIKI SAUCE
- Cucumber, 1, grated using large holes on grater
- Yogurt, 3 spoonfuls
- Garlic, 2 cloves, grated
- Freshly squeezed lemon juice, 2-3 tsp. to taste
- Dill or fennel
- Spearmint
- Salt
- Honey
Season both sides of your lamb shanks with ample salt, ground black pepper, cumin and ground paprika.
Sear on both sides with olive oil until both sides are brown.
Place the lamb shanks in your slow cooker pot (but don’t cook yet!).
In the same frying pan, fry your onion until brown and translucent.
Add 1/2 can of canned tomato and let it simmer down.
Add red wine and chicken stock and simmer for about 5 min.
While that’s simmering, chop up carrots and garlic (I always go with more cloves!) and add to your slow cooker pot.
Sprinkle rosemary and oregano on top.
Pour the red wine, chicken stock, onions and tomato sauce over the lamb shanks.
Set your slow cooker to high heat for four hours.
Go somewhere for a bit and come home to a delicious-smelling home!
The lamb shanks taste great and juicy by themselves but for that extra garlicky kick, add some Tzatziki sauce too!
