Introduction

Easy Summer Ceviche

Ceviche is a healthy Peruvian dish generally made from raw fish or shrimp marinated in lemon or citrus juices. The acidity in the juice cures the fish which helps it become firm and opaque while absorbing flavor.

For this recipe, I used madai which I wrote about its benefits here. The subtle flavors of my favorite fish go so well with the bright, sharp tomato, capsicum and cilantro summer flavors!

Ingredients

  • Raw fish
  • Mini tomatoes, 4
  • Capsicum, 1
  • Cucumber, 1
  • Red onion, 1/4
  • Mango (optional)
  • Cilantro, a bunch
  • Lemon, 1
  • Salt, 1/2 tbsp. 
Dice raw fish and vegetables.
Freshly squeeze lemon juice and add to your diced fish and vegetables.
Add salt and marinate your ceviche for a minimum of 30 minutes in the fridge.
