Gluten-free Flatbread

I harvested some herbs and greens from the veggie patch today so I was inspired to make one of those pretty Pinterest flatbreads! This gluten-free recipe is so chewy on the inside and crispy on the outside, and pairs so well with Mediterranean sides – hummus, grilled tomatoes and cheese with basil, or just simple olive oil and salt!

Ingredients

  • Gluten-free all purpose flour, 1 cup
  • Yogurt, 1/2 cup
  • Baking powder, 1 tsp.
  • Salt, a dash
  • Olive oil
  • Herbs
Preheat oven to 200C. 
Mix gluten-free all purpose flour, yogurt, baking powder and salt well.
Pat flat on a baking sheet and – optional! Add herbs to make your flatbread smell and look great – and drizzle with olive oil.
Bake for 10~15 minutes (be careful that it doesn’t burn).
Let it cool then enjoy with hummus, dips and sides!
