Vegan Chocolate Peppermint No-Bake Pie

After a lot of rich holiday dishes, you want a refreshing dessert and this chocolate peppermint pie hits the spot! It’s easy to assemble, no bake (just freeze for a couple of hours) and soooo yum – just thinking of it makes me hungry! It’s vegan, gluten free, dairy free and refined sugar free.
I used COCONO’s coconut yogurt for this recipe but you can use regular yogurt as well. The peppermint flavor blends well with the creamy, tangy yogurt. The base is like a chewy brownie!
I decided to have some fun with the colors and added berries and a pinch of spinach leaves to make my yogurt layer red and green (don’t worry, the spinach doesn’t make your yogurt layer taste different!). Anyway I was a bit stingy with the berries and spinach, and my colors turned out less vibrant and more pale pink and mint. Remember (from my latest gingerbread house recipe) – food decor is not my strength haha. But hey, it tastes amazing!

Ingredients

BASE

  • Almond flour, 1 cup, 
  • Unsweetened cocoa powder, 1/3 cup
  • Coconut oil, 1/4 cup
  • Honey, 1/4 cup
  • Vanilla essence, 1/4 tsp.

YOGURT LAYER

  • Yogurt, 1 & 1/2 cup
  • Peppermint essence, 3/4 tsp.
  • Honey, 1 & 1/2 tbsp.
Blend your base ingredients in a food processor until it looks like crumbly dirt.
Line a circular pan with baking sheet (or if you’ve run out like me…clear wrap will do) and pat down your chocolate base until flat.
Blend your yogurt layer in a food processor until well mixed.
For some fun colors, add berries or spinach to your yogurt mix and blend!
Pour your yogurt mix over the chocolate base.
Freeze for at least an hour.
Serve chilled!
