Introduction
Gluten-Free Chewy Pizza
Over a year ago, I made a thin-crust gluten-free pizza using all-purpose gluten-free flour. It was good, but a bit too crunchy for my liking with a tendency to burn quickly. This time I’m using rice flour for a chewier texture and am happy with the results!

Ingredients

Rice flour, 1 cup

Dry baking yeast, 2 tsp.
- Egg, 1
- Olive oil, 2 tbsp.

Warm water, 1/4 cup

Coconut sugar, 1/2 tbsp.

Salt, a dash
Mix water, yeast and sugar until the sugar is dissolved and let it sit for 5 min.
In a separate bowl, mix rice flour, olive oil, egg and salt.
Add your yeast mixture and start kneading.
Cover it up and let it sit in a warm part of the house for an hour.
Preheat your oven to 220C.
After letting your dough rise (don’t expect it to grow massively), flatten it out on a baking sheet.
Bake for 8 min.
Add your toppings and bake for another 5 min. until properly baked. I used a drizzle of olive oil and sliced mozzarella for my toppings this time so it required minimal cooking time.
I added fresh arugula, smoked salmon, dill, capers and a drizzle of olive oil when the pizza was out!
