Introduction

Ume Shiso Mojito

Mojitos are one of my favorite summer drinks, both cocktails and mocktails! This kid-friendly one is refreshing for hot summer days. I tweaked it a bit to include two Japanese summer essentials: pickled ume (Japanese plum) and shiso leaves.

Not so humblebrag: I’m particularly proud of this one as I used organically grown cucumber freshly harvested from my first veggie patch!

Homemade Ginger Beer Meraki Japan

Ingredients

  • Pickled sweet ume
  • Mint
  • Shiso leaves
  • Cucumber
  • Ginger (optional)
  • Coconut sugar
  • Carbonated soda water
  • Ice

In a blender or food processor, blend the ume (make sure you pit them first!), mint, shiso, cucumber, ginger and coconut sugar.

Taste as you go – you’ll be adding carbonated water to this so it’s okay if the flavors are strong!

If it’s not blending smoothly, add a little bit of water!

Chill for an hour, then serve with carbonated soda water and ice.
