Introduction

Roasted Beets & Carrots

A simple side dish of roasted beets and carrots! These two combined provide so many benefits like fighting inflammation, improving eye health, aiding athletic performance, supporting brain and digestive health. I like adding a bit of Camembert for added flavor.  

Roasted Beets Carrots Meraki Japan

Ingredients

  • Beets, sliced
  • Carrots, sliced
  • Olive oil
  • Salt
  • Pepper
  • Fennel
  • Honey
  • Camembert

Roast beets and carrots topped with olive oil, fennel, salt and pepper in the oven at 210C for around 20 minutes.

At the last 5-min. mark drizzle some honey on the beets and carrots (if you add the honey too soon the flavor will get lost).

Serve at room temperature with slices of chilled Camembert!
